resolutions in review...

we are one month into the new year and it also happens to be the chinese new year, so i want to see how i have done so far on my resolutions and what i can continue to approve upon...

resolutions i've kept: i feel that this year so far i have been good about getting together with old friends or new friends that i would like to get to know better, and build stronger relationships.  i have done a good job with keeping to my workout schedule, and in fact i have heard from 3 people that i look thinner.  i have been going to bed later and waking up earlier and in general sleeping better.  i have been enjoying nature and in fact make it a point to have a good outdoor activity every weekend.  in general the weekends have been fun, and our calendar continues to fill out with exciting events.  i also feel like i have been educating myself on topics i am interested in.

resolutions that need improvement:  i have let work get the best of me over the last couple of weeks, to the point of frustration tears.  i don't want work to have that kind of negative influence over me or my well being.  i still need to learn how to master the art of drinking lots of water, it seems so easy, yet is so hard for me.  i have been battling with a lot of food cravings lately (sweets in particular) and i could do a better job of self control.  i also lost my inspiration in kitchen and am hoping to find my love of cooking again soon!  while my workouts have been consistent, it is time to take them to the next level and really push myself.

  

i think overall i have made a good attempt at keeping my new years resolutions, but there is always room for improvement.  i strive to be happy everyday and live a healthy life.

almond butter...

to be honest, the holidays this year left me feeling quite depleted.  i did a lot of cooking and had quite the battle with baking.  unfortunately this has me temporarily feeling unmotivated and uninspired in the kitchen, and cooking is one of my favorite past times.  so the crock pot and almond butter have become me two favorite go-tos.  since the weather has been so warm lately, the crock pot does not sounds as appetizing, so i have been making a lot of almond butter and honey sandwiches for dinner.  at first i bought a jar of almond butter for my smoothies, and being a peanut butter lover, i was not as fond of the taste.  but that has changed and i absolutely love almond butter now, and not to mention it is far less processed, check out some nutritional facts and differences  here

my favorite brand so far is the trader joes unsalted, raw almond butter.  try it on a graham cracker with a few chocolate chips for a good and kinda guilt free dessert.  and as with any nut butter that has oil that needs to be stirred in, store it in the cabinet upside down for easy stirring.  enjoy!

chicken curry mac...

honestly, this is not my favorite recipe, but jarad loves it.  i usually will make myself pasta with marinara when i make this for him, but this is jarad's spin on mac n cheese.  it sounds like an unlikely combo, but it surprisingly goes well together.

ingredients:
1/2 lb penne pasta
1 cup yellow curry simmer sauce (i get this from trader joes, or you can make your own green curry sauce.  see my green curry recipe for instructions)
2 1/2 cups frozen stir fry veggies
1 chicken breast cooked and cubbed
1 1/2 cups cheddar cheese

how to:

mix all ingredients in a large bowl and bake in a casserole dish at 350 degrees for approximately 20-25 minutes, or until bubbly and golden.

pomegranate...

pomegranates are know to be messy and stain badly.  here is the easy way to remove the tasty seeds so you can enjoy them by the spoonful, on yogurt or in a salad.


step 1: cut pomegranate in half


step 2:  loosen the flesh by pulling the sides so it loosens the seeds


step 3:  over a bowl, hit the pomegranate with a wooden spoon so that the seeds come out


step 4: enjoy!!!

first weekend of the new year!!!

it has been an awesome weekend so far, and one that incorporated a lot of my new years resolutions.  we woke up this morning to go on a hike with great friends (and the dogs of course), had a fantastic lunch and tonight we celebrated a dear friends birthday and engagement!






i would say this day was full of fun, nature and celebration (all 3 things on my new years to-do list).

we started the new years eve celebration early with a nice beach bike ride with good friends, food and drinks, followed by a relaxing evening with my most favorite friends, family and dogs!
