entertaining at work...

i would say that i have an unusual office set up.  we are a post production house that edits TV commercials.  we have long hours and while our editors are working and clients are waiting for feedback we have a lot of down time.  of course food and alcohol seem to keep people happy and entertained so that is what we do best!  we serve breakfast, lunch (dinner if people are still working that late) and all the snacks in between.

we are severely understaffed at work this week, so i offered to come in and set up a breakfast spread for our clients.  i had to be in at 7am which made it hard to order from a restaurant since that is awfully early.  so i went to trader joes the night before and got lots of goodies to make this beautiful breakfast spread.  the cost was under $60 and it would easily feed 8-10 people.

trader joes shopping list:

1 pack potato pancakes (in frozen section)
3 small spinach quiche (in frozen section)
2 packs of pre-cooked bacon
1 package scones
1 package crumpets
1 loaf of sweet bread
lemon curd
orange juice
fruit for rainbow platter: strawberries, raspberries, orange, bananas, green figs (or kiwi), and blueberries

i cooked the frozen items and made my fruit platter.  i make sure to arrange the dishes so that it looks interesting and with different heights and of course a pretty table runner.  this took me about 30-40 minutes to cook and set up and i think it looks impressive.  although this is for my work clients, this can be used for a brunch at home with friends and family.  i am particularly fond of my rainbow fruit platter, it always comes out fun and festive looking, a fun way to eat!

zucchini carpaccio salad...

this is a great summer salad, it is cool, refreshing and light.  this is also a great salad if you are trying to eat on a raw diet. 


1 large zucchini (this is enough for 2 people as a side dish)
cheese (feta or fresh parm shavings work well)
few stalks of asparagus
vinaigrette dressing

how to:

with a vegetable peeler peel your zucchini length wise.  you can also do the same if you choose to add parmesan cheese.  grab a few stalks of asparagus and cut the ends off and then cut the asparagus into 1 inch pieces. 

vinaigrette dressing: (this is great to have on hand in your fridge, it keeps for a couple of weeks)

1/4 cup olive oil
juice of one lemon
1 shallot finely minced
3 T parm cheese
salt and pepper to taste

lemon lentils...

this is one of my favorite side dishes.  lentils are part of the legume family and they come in lots of different varieties.  my favorite are the french green lentils.  i buy them in a small bag at trader joes for under $2 and this is my favorite way to prepare them.


1 1/2 cup green lentils
1 lemon
1/2 white onion
2 T olive oil
salt and pepper to taste

how to:

i boil my lentils for about 20-25 minutes in a small pot until tender.  then i cut the onion in small slivers and saute in fry pan with 1 tablespoon of olive oil.  once the onions are translucent i add the lentils, lemon juice, remaining olive oil and salt and pepper and saute together for a few minutes. 

they make a great side dish, a good salad topping or you can make it into a cold salad with some veggies.

~30% of the calories in lentils come from protein
~they have a ton of iron.  a one cup serving will give you over 1/2 of your daily amount
~green lentils have about 20% more fiber than other red or pink varieties

happiest birthday to my grandma, who is such an inspiration to us all.  she is 83 years young.  i am pretty sure her secret is to dance your heart out, eat salty potato chips with a coco-cola often and have a sense of humor.  oh yah...and apple cider vinegar of course!

a week of healthy meals...

i am really pleased with the way i planned my healthy low carb meals for the week, so much so that i wanted to share...

sunday night - meatloaf with roasted potatos and spinach

monday night - leftover meatloaf.  jarad had his in a scramble with 3 eggs, jalepnos, onion and cheese, and i just had a big ole piece of meatloaf by itself.

tuesday night - zucchini pasta with trader joes frozen turkey meatballs

wednesday night - grilled chicken (cooked enough for 2 meals worth) with lentils and raw zucchini salad

thursday night - grilled chicken salad (leftover chicken from night before)

friday night - no cook!  jarad gets to take erin out for a delicious dinner of her choice!!! (which usually means in n out, chicken shack or el gringo)

i have to mention that the last couple of weeks have been filled with long work days and added stress, but i found the time and energy (barely) to still make a fresh and healthy meal.  i know that because of this my body is thanking me and i am happy that i was able to make good choices when i know it would have been easier and faster to pick up something on the way home or eat crap.  i have never made a meal plan before, but my impromptu meal plan this week worked well, so that i had great meals every night and was able to use leftovers to create some of them.

health challenge...

still trying not to let get stress get the best of me in this happiness challenge.  but i have challenged myself to do 3 healthy things each morning before leaving the house.  today it went something like this...

1. go for a good walk with wilfred
2. take a shot of apple cider vinegar
3. make a delicious kale smoothie to sip on the ride into work

if i can keep up these good and healthy habits throughout the day, i will be feeling like a million bucks!

kale smoothie recipe:

1 T chia seeds
1 T ground flax seed meal
1 T almond butter
1/2 t cinnamon
1/2 frozen banana
3-4 frozen strawberries
handful of kale
3/4 cup unsweetened vanilla almond milk

happiness project day 1...

today i am starting my happiness project.  i have had a rough start to my day so far, so i am gonna have to dig down deep to get through the day with a smile on my face.

i do have things to be happy about today...just to name a few...

~i am happy that our good friends just had a beautiful addition to their family and everyone is happy and healthy
~i am happy that my husband is so loving, patient and understanding 
~i am happy we will be celebrating a wedding this weekend, which means a road trip to ojai!!!
~i am happy that i get some girly time in tonight over a pedicure

we all have 24 hours in a day and our time is precious.  over the last 2 days i have encountered 3 incidences that opened my eyes to this concept that people carry that their time is more important than yours...

yesterday in the doctors office this woman was speaking to the receptionist about a test that needed to be done and then a woman interrupted them with a question.  she looked at the lady inquiring about her test and said "sorry, but i have somewhere to be."  well, we all have somewhere to be and something to do.  just because you are running late does not mean you should be rude or interrupt, you should get in line like everyone else.

then this morning at the gym, i went to use a weight machine that was vacant.  this guy came over to me from another machine and asked if i could wait so he could finish his set.  i was confused because he wasn't using the machine or even by it.  i politely told him he could finish his set, but was bothered by this. 

then later today i had an interview scheduled at work, the girl was a no show and didn't call or email to let me know she was not coming. this is a bad first impression when trying to find a job.

i am noticing this pattern and it is disheartening and rude.  so i don't want to bring any negativity to my blog, but remember to smile, do something nice for others, take the time to open doors and always say please, thank you and have a nice day.
