i have been making a lot of chicken stir fry and instead of serving it with a large portion of rice, i will make a small portion (1/2 cup dry) and then mix it into my stir fry. it's been coming out really tasty, but i decided to give it a mexican flare and came up with this turkey skillet. it is really not a low carb dish, but there is not too much rice in it and it is still pretty healthy.
ingredients:
1 pound ground turkey
1/2 white onion diced
1 grated zucchini
1.5 cups of soycutash (in the frozen section of trader joes - mix of shelled endumame, corn and peppers)
1 can of black beans
1 packet of taco seasoning
1/2 cup rice
1/2 avocado per person for garnish
green onions for garnish
how to:
i start by cooking my onions and zucchini until transparent. at this point i also start cooking the rice. then add my turkey meat. once my meat is almost all cooked, i throw in all the remaining ingredients and mix well together. once the rice is cooked throw it in there too and stir until thoroughly incorporated. serve with a half an avocado and some green onion.
