tonight is pizza night at our friends house, and i usually bring a salad and wine. but today i was feeling inspired in the kitchen and decided to make a dessert as well. recently there were some nice organic pie crusts on sale at the market and i bought a pack not knowing what i was going to do with them. so i put one of them to use this morning and froze the other.
here is how i made my rustic apple galette, and i am embarrassed to say it couldn't be any easier.
ingredients:
1 pre-made pie crust
4 medium apples (peeled and sliced into thin pieces)
4 t corn starch
2 t cinnamon or apple pie spice
1/4 cup sugar
2 T butter
3 T jam (i used raspberry, because that is what i had, but normally i would use apricot)
how to:
on a cookie sheet let your pie crust come to room temp. this takes about 25 minutes, so this is a good time to prep your apples.
then in a bowl i mixed all of the dry ingredients. you could either put your apples in the bowl and mix them until covered. but i chose to fan out my apples on the pie crust and sprinkle the mixture on top (make sure to leave an edge, so you can fold the crust over). i actually had a lot of leftover mixture, so maybe you can reduce the measurements. i took the butter and broke into tiny pieces on top of apples. fold crust edge over and bake at 400 degrees for 30 minutes or until pie crust is golden and apples are tender.
then i take my 3 T of jam and mix with about 2 teaspoons of water and brush over the top. this makes the apples shiny and glazed.
let cool and serve! this is good by itself or with ice cream or whipped cream. i think this could even be a great brunch pastry.
