bow started out as such a good eater, excited to try everything and didn't turn her nose up to much! lately she has become a self proclaimed vegetarian and would rather not each much meat. good thing is she loves all dairy, so i know she is getting some good protein. but she will fall in love with a food for a few days and then get tired of it. and she is getting more independent and wanting to feed herself.
my mom suggested the baby quiches, and i spent too much time walking up and down the frozen aisle at costco and couldn't find them. so i decided to make my own, and they were super easy.
i took a mini muffin tin and sprayed it with cooking spray. then i put a couple a big pinch of shredded cooked potatoes. in a mixing cup i cracked two eggs and about 2 T worth of shredded cheese. i mixed it together and poured it into each muffin. baked them at 350 degrees for 10-12 minutes and i have little egg muffins. she is still unsure of them, but they will keep in the fridge for a few days or you can freeze them. just warm them up and serve. i am hoping she falls in love with them because what a great way to get protein and veggies in and they are a perfect size for her.

Glad you listening to your mama. If she likes them, there are endless variations...chopped spinach, brocolli, ground turkey or sausage, spicy cheese. It can be a good little vessel for goodness.
