jarad wanted to go on a diet after his birthday and really clean up his eating. i have to say i am not the best cook when pregnant and don't enjoy it as much either. so here is his new eating habits and with a little prep work i think he will be eating much better than before!
breakfast:
steel cut oats or egg cups
lunch:
hard boiled eggs
apple
chicken sandwich
full fat greek yogurt
snacks:
special K cereal
cottage cheese
dinner:
salad with chicken, shredded cheese, kidney beans and trader joes veggie mix
i am used to making his lunch everyday, so that doesn't change much. but he is making it easy on me just having a salad for dinner. i love not having the question of "whats for dinner?" or trying to come up with something yummy and creative. the only extra prep work i have to do is make sure i have plenty of chicken for both lunches and dinner (i usually make this 2 times a week), hard boiled eggs and i made these eggs cups this morning. i will freeze them and he can heat them up as he wants and then substitute with oatmeal if he is running late.
i believe i may have posted a recipe on these egg cups before, but they are super easy, quick and versatile to make! they can go in the fridge to snack on for a few days or in the freezer. i was making a lot of these when we were getting eggs a couple of times a week from our neighbors. i put a small amount of hash brown in the bottom, cheese and green chilies. you can put anything you like in them and then i beat 6-8 eggs and pour the muffin tins about 3/4 of the way full and bake at 350 degrees for about 15 minutes or until the eggs are set.

This sounds great for Jarad, but what's little Mama eating? A cheese burger I hope. Let's hear your plan of action for yourself, you are growing a baby and that's hard work and takes Calories!
