my family enjoys this dish once a year...on christmas. although it is not hard to make, it is reserved for christmas breakfast because it is so decadent. we have always called it the "chili cheese thing" and my mom usually makes it. this year is my turn, and i hope it comes out as good!
ingredients:
1 lb. grated yellow cheddar cheese
1 lb. grated pepper jack cheese
6 eggs beaten
8 oz sour cream
1 can ortega chilis (8 oz)
5-6 stalks green onions diced (optional)
how to:
it is best to buy a block of cheese and grate yourself. in a greased 9 x 13 dish layer all cheeses and mix in ortega chilies and green onion. i also chopped up some pickled jalapenos as well, but this is also optional. blend sour cream with beaten eggs and pour egg mixture over cheese.
bake at 350 degrees for 45 minutes until firm and golden. blot off grease before serving.
