coquito recipe

this is the drink i exchanged my flan for.  i was told that it is a puerto rican version of spiked eggnog for the holidays.  when i had my first sip, i was shocked at how good it was, it is sweet, creamy and rummy.  and it doesn't remind me of eggnog or christmas because this recipe does not have nutmeg in it.  i was told to sip it from a shot glass and the rum will sneak up on you.  i think this makes the perfect night cap and i am excited to try the recipe myself.  this may be my new holiday gift for friends and neighbors this year! 
 
Ingredients:
 
1) Can of Coconut milk (preferably Coco Lopez found at Safeway)
2) 1 Can of Evaporated Milk (Carnation is the best)
3) 2 tablespoons of condensed milk (Carnation)
4) Powder cinnamon (add to taste and look, it adds some nice color)
5) 6 ounces of Rum - Bicardi dark rum

Throw all the ingredients in the blender with the cinnamon last and just blend for about a minute. Refrigerate and serve cold. 

Always shake the bottle lots before serving ti remix the cinnamon and because the top tends to get creamy heavy. So mix well before reserving.
