we have french toast for breakfast most weekends, it is one of jarad's favs. a couple of weekends ago, i decided to tweak my recipe and it came out amazing! it is very easy and very impressive. here are the ingredients for 2 people:
4 pieces of cinnamon swirl bread (i prefer the kind from trader joes - whatever you use make sure it is thick cut)
2 large eggs
1/3 cup vanilla coffee creamer
1 t. vanilla extract
1 large dash of cinnamon or pumpkin pie spice
1 1/2 cup panko bread crumbs
butter or vegetable oil to cook french toast in fry pan (your preference)
how to:
i use a pie pan to combine eggs, creamer, vanilla and cinnamon and then dip my bread on both sides to get it well coated with the batter.
then i put my panko bread crumbs on a plate and give it a good dash of cinnamon. i take my batter coated bread and dip it in the cinnamon panko on both sides. the batter will help the panko stick to the bread very well.
turn your fry pan on low to medium heat, and melt a good tablespoon of butter or a thin layer of vegetable oil. it is important to use enough fat in the pan so that the panko does not burn and you get a golden crust on the outside of the bread.
you will know the french toast is ready to flip when it gets golden.
i like to serve with strawberries and bananas and vermont maple syrup.
