it's been a while since i have posted a recipe, but this was one i made during snowmageddon and i loved it! it is adapted from "life is but a dish" version of lasagna soup!
ingredients:
20 oz can of crushed tomatoes
1.5 cups of your fav marinara sauce
4 cups chicken broth
2 cloves garlic
1 small onion
1 pound of ground beef or turkey (i used my frozen pesto turkey meatballs in its place)
salt to taste
3 t italian seasoning
5-6 sheets of lasagna noodles broken into pieces
toppings for soup:
mozzerela cheese
parm cheese
ricotta cheese
serve with garlic bread! yum!!!!!
how to:
in a large dutch oven sautee your finely diced onion and once almost translucent add in your garlic. then your meat. i make large batches of meatballs and freeze them so i thawed them and added in place of chop meat. then add all your liquid ingredients and seasonings. simmer for 10 minutes, then add in your lasagna noodles and when they are tender you can serve it up. serve with some different cheeses and garlic bread and it is hearty and delicious! a super easy way to get the taste of lasagna without all the work.
