white bean and chicken chowder...

last weekend my parents helped out their new neighbors, and as a "thank you" the neighbors brought them over the most delicious white bean and chicken soup.  i looked online and combined a few different recipes and will be slow cooking mine in the crock pot on this rainy day.

ingredients:

2 chicken breasts
3 cans of white beans
4 anaheim chili peppers
1 medium onion
1 1/2 cup frozen corn kernels
1 cup sour cream
1/2 cup half and half
1 qt chicken stock
1 t. dried thyme
1 t. chili powder
1 cup pepperjack cheese
salt and pepper to taste


how to:

dice up your anaheim chilis and onion and cut chicken into bite sized pieces.


throw all ingredients into crock pot (minus sour cream and half and half) and slow cook on low for 8 hours.


this is what the soup looked like when i got home from work...


at this point, i turned the crock pot onto high and added in the 1/2 cup of half and half and 1 cup of sour cream.  stir well, and let thicken up for approximately 30 minutes...


garnish soup with a dollop of sour cream and pepperjack cheese and serve with crusty french bread.
