meatless monday!

i've been adding more tofu to our line up and it always surprises me that this is one of jarad's FAVORITE meals!  he loves it, which makes me so happy when he genuinely enjoys what i cooked. 

this is a cauliflower rice bowl with veggies (zuch, squash, carrot and broccoli) and pan fried tofu with spicy peanut sauce (store bought from trader joes).

the secret is buying extra firm tofu and pressing it prior to pan frying it.  this takes a little time and prep, but if you want crispy tofu, you can't skip this step.  i take the tofu out of  package and wrap in a clean dish towel and paper towels and place on a cutting board and place something heavy on top (like a pan weighted down or in this case a ceramic bread box).  i will change out the paper towels until they are just damp and you have pressed out the majority of the moisture. 

i don't have a recipe, i just use what i have on hand or what sounds good.  and we don't miss the meat at all!
